Getting simlply organized

My Simplified Planner by Emily Ley made its way across the ocean from the US to to my house in Italy today! So excited! It looks as good in real life as it does on Emily's website. I came across her instagram account by chance.  She's a mother of three and a designer and has become a great inspiration for me. I love her mantra "I hold myself to a standard of grace not perfection". Her design is beautiful. Check out her website!

Egg and avocado bread with cherries

Made this for dinner: whole wheat bread with tahini, avocado, egg, lettuce and dried cherries!! Want to eat this again tonight!

Quinoa salad

I made this fantastic quinoa salad for dinner. This is what I put together:

quinoa (cooked in vegetable stock, cooled)
sweet corn
cherry tomatoes

olive oil
rice vinegar
salt and pepper

I was asked when I will make this again, that's how good it was. If you like meat, you can top the salad of with organic, thinly sliced, grilled chicken breast.

Third Trimester!!!

Feeling so blessed!!! My pregnancy has been wonderful so far!! Cannot believe I will hold our little baby in my arms in a few weeks time!!!

Kale juice

Starting my day with "joyous health" kale juice consisting of

4 leafs of kale
thumb size of ginger
1/2 cucumber
1 apple 
1 lemon

Rainbow lunch

I made this rainbow coloured salad yesterday for lunch - it's so good and healthy that I am already craving it for today's lunch! 
This is what I put in it:
sliced mushrooms
some mixed nuts (walnuts, almonds, cashew, hazelnut)
one mandarin (sliced)
goji berries

I was out of chia seeds but will use them in today's version - and I will add some fresh mango!

As a dressing I used sweet (honey) mustard mixed with a splash of coconut oil and water.
